Hi everyone i hope you are all well.I would like a little advice on pale rye malt, iam going to make Rye stout but iam not sure on what is the maxium amount of pale Rye malt i can use in my grain bill.One site says you can use a max of 50% in your grain bill yet hop&grape advice is you can use up to 20% of Rye malt in you grain bill.I know why you can't use 100% pale Rye malt in your grain bill and that reason is Rye does not have the same Enzeme power has Maris otter or other base malts.So if i can find out what is the max % of rye malt i will know how much base malt to add to help the convert the enzeme sugars in the Rye malt,

It's not the diastatic power that's the issue, it's that that rye is very difficult to mash due to not having a husk, and produces a slimy wort. One German brewer who used 60% rye had to develop a modified mashing regime to cope with it.
