Liquorice flavours

I've been drinking a fair few commercial ales recently that had a nice liquorice taste to them, a few dunkels, Belgian brun's, the odd Imperial stout.

Can anyone suggest what malt, or combination of malts, would give me this sort of flavour in an extract brew?

I'm not sure that taste comes from malt. You can get it from adding a bit of fennel or star anise.
I'm just here for the beer.

Licorice Root goes well in dark beers, look for it at one of your LHBS.

Make sure that you add the licorice after fermentation. boiling will destroy the flavour

Chocolate in big concentrations will produce some licorice flavours. Especially when left to mature.

The last 5 minutes of the boil would be fine for Powdered Liquorice or Liquorice Juice Sticks, I've proved this personally http://pdtnc.wordpress.com/2010/12/05/a ... cle-stout/ Loads of flavour.

I bloody hate Liquorice Alsorts... adulterated liquorice.

Malts-wise, Dark malts when young in the bottle can give liquorice notes to a beer, my Imperial Stouts were pure liquorice until about 3 months old.

I made a brew with 500g of black and 500g of chocolate. (as well as 7kg of pale)

My mate said it tasted a cross between liqourice and petrol.

Just saw this, when I add about 150grms of roasted barley in the boil I get a liquorice after taste and very nice, you may have to experiment for your personal taste, hope this helps

Theakstons yeast gives a lovely liquorice flavour.:)
