I've got some of each in the cellar and I've been thinking about blending them in a brew,

Just thinking along the lines of something malty, 5% ish and about 40- 45 IBU

Not wanting to get too refined on this but are they UK or Weyerman Munich and Vienna? (UK Vienna seems to be very heavy compared to the weyerman)
They go well together - will be a VERY malty brew, more like a bock/octoberfest. You wouldn't need any crystal with those. Could be balanced with very American hops to go down the Evil Twin (huge malt, huge hop) style beer - http://www.mrmalty.com/late_hopping.php

I'm pretty sure there both uk, that's good news then, now I need to work out home much of each to add to the grits,
shall I whack in about 500gms of each, shall i really go for it and stick in some aromatic
malt in there too? Hmmm what to do what to,
It's going to be one of the last brews I'm I'm going to be brewing for abit so i want make it a gooden,
Good idea with the hops, I've for some hops I want to try out too.

Ahhh so you;re thinking of using SOME of them not brewing with them as your entire base malts? (You can - it makes it maltier than a VERY malty thing!)
500g+ of each will be great. What grits? (Rice/corn?) Or typo - grist.
I'd use less munich as it's really rich (especially UK munich, Weyermann pale munich is fine straight up)

using pale malt and blending willamette and pilgrim, no idea if they go well together!

YEah looks spot on will add some malt backbone. I;ve made a 100% munich beer before and was a little TOO malty TBH so 10% is spot on / quite low.
Hop choice sounds nice, I really like williamette as aroma/flavour hops and pilgrim sound really good too.
