I have just ready the stickie on grain and my question is
I live in greece and my only greek source of grain uses brewferm malts as described on the BROUWLAND.COM site these are mainly belgian malts and for instance the pale malt is shown as 7-9 EBC compared with 5 for english malts
can I use these in a clone from g wheeler book and if so how do you adjust quantities or do I have to send from uk (postage is very expensive for 25 kg sack)

The EBC is just the colour of the malt so your beers will just end up a tad darker than the recipe intended. I'd suggest you brew exactly as per the recipe.

A lot of GWs recipes have Black Malt to adjust the colour. Simply reduce this using your favourite recipe software and Bobs your Uncle

I dont actually have the book yet, it is in the post along with r protz real ale almanac I already have Marc Ollosson real ales from 1997
what is the easiest software to use for a first timer at ag still gathering equipment together to move from kits
I have spent alll this evening playing with brewmate do you recommend it?

Use what you have and don't stress over it. I've often used grains that weren't my first choice because of price considerations.
