He also sells Crisps pale male for £21.50. On my second sack now, it's excellent malt.

How does it differ from MO?, can it be used as a straight substitute in recipes? :)

The only difference I've found is slightly better extraction rate. Can taste no difference.

I will certainly be buying the Crisps malt in the foreseeable future.

Why is it that 90% of British recipes use MO as the base?

Because it's traditional, although I did once read that there is not enough MO grown to cover all the claimed usage. No idea whether it's true but I can imagine breweries mixing MO with a cheaper variety just so they could use "Maris Otter" in the description...

Given the option, I'll always use MO unless the price is daft but only because it's traditional.

Well MO was "only" introduced in 1966 so it's not got too much historical usage. And then is was out of popular use until the early 90's.

My brother-in-law who works for an Oz based malting company says, it's a low yield, disease troubled, old style, anachronism. They don't deal in it anymore. Brewers (both commercial and home) no longer want it because of it's average extraction rate and cost. It's overpriced because so few people internationally grow it. The returns for the grower and maltster are so poor, that it's really only a UK niche market thing.

Not sure I agree with your brother-in-law's verdict. I much prefer the view of Warminster Maltings:
Maris Otter is widely acknowledged right across the brewing world as The Finest Brewing Malt in the World.
The fact that it is still grown must mean it has something going for it. For me, English Ale and Maris Otter go hand in hand but I can't speak for Aussie beer.
