Biscuit malt in NZ Cascade Pale Ale?

Biscuit malt in NZ Cascade Pale Ale?

I am doing an all NZ cascade pale ale this weekend and I am thinking about using biscuit malt. I've only ever used it in belgium dubbels, so I'm not sure if it goes in pale ales. I know that the yanks quite often use Victory malt in their pale ales and IPAs. I've never used Victory but I think it's a bit like biscuit malt, isn't it?

The malt bill will be something like this

MO Pale malt 2300g
Pilsner malt 2300g
Munich malt 500g
Biscuit malt 250g
Wheat malt 100g

Just wondering if anyone uses biscuit malt in pale ales and knows if this will work?

Never used biscuit in a pale ale but it might be good.

I did an APA with amarillo and cascade a while back that had a similar grain bill (except it was all MO no pilsner) with the 250g of biscuit as a replacement for the victory malt that was in the original recipe and the beer turned out very well indeed. It was very balanced and despite all the hops the malt came through as well.

Hi Jim

I did go for it! I brewed this one 5 weeks ago and it's almost all gone now. I cut back on the biscuit to 150g and upped the caramunich. This was a nice brew and I'd make it again, but maybe up the IBU's a bit and I'd be a bit braver on the biscuit next time and less caramunich. Hops come through nice - very lemony a bit like motueka but more so.


2.30 Kg MO pale malt
2.30 Kg Pilsner malt
0.50 Kg Munich
0.34 Kg Cara munich
0.15 Kg Biscuit
0.17 Kg Wheat malt

40IBU
20g NZ cascade At start of 60 min boil
10g NZ cascade 20 min
10g NZ cascade 15 min
15g NZ cascade 10 min
20g NZ cascade 5 min
21g NZ cascade 0 min

hi i have started using biscuit malt alot in my pale ales.It gives body, golden colour and sweet toasted bread flavour to balance the hops.I have used up to 350g in an I.P.A. once wich i brewed for friend birthday bash so i would say be brave and try blending it with some of are british crystal and amber malts.
