It aids with better head retention and body, probably most often used in lighter coloured lagers.

I've been using it to give body without adding much colour.

I thought i did give flavour, by adding unfermantable dextrins which will give a higher FG giving a sweeter beer.

Dextrins do not taste sweet, they give only the sensation of fullness in mouth. Carapils is not caramelized malt, to get sweetness you have to use malt that has maltose caramelized, caramalt, carahell, carablond or other ~25 ebc malt is the lightest.

Using step mash you can get the same effect as carapils by shortening beta amylaze rest and mashing longer at 72-73c so in my case carapils is of no use. :)

Boy, thats confusing me now :?

I thought a high FG was a sweeter beer, just like a mash temp will give a sweeter beer by producing unfermentable dextrins and making the FG higher, ie sweeter.
