Wheat Malt

Hey guys,
I'm thinking of having a go at a wheat beer (something similar in style to Weihenstephaner).

Is there much difference between generel wheat malt and something like Dingemans wheat malt?

I notice on TMM the description for Dingemans says it can be used from 30-70% of total grist, whereas the description for Fawcetts Pale wheat malt suggests a maximum of 40%.

I think the recipe will be ~50% wheat , 50% pale malt. Would it be worth splashing out the extra 40p per kilo for Dingemans?

Hi Kane

I use Rob at the Malt Miller for my wheat malt. I think you can use any wheat malt regardless of supplier. You can go up to 60% wheat to 40% pale - I tend to use 50/50.

It's really down to taste - just go for the cheapest initially - if you don't like it go for the more expensive option - it prob won't matter.

Really with wheats its more down to the yeast - thats why I use White labs - WLP300 or WLP320.

I've not used Dingemans so I can't say much about it. American white wheat malt is a bit larger than German wheat malt, closer to the size of barley malt, and is easier to mill at home.
I'm just here for the beer.
