Morning all,
I picked up some Chevallier Heritage Malt from Rob the other week and I've decided what I'm going to brew with it, but aside from the information on the website does anyone have any experience with the malt in regards to mash time and what sort of flavour to expect?

I've not used it myself, but there is a commercial brewery in Cheshire which uses it in one of it's beers. Off the top of my head, I can't remember which though.

That would be Shane at The Cheshire Brewhouse. He did a Chevallier Malt version of his Govinda back in 2015. I tried Shane's Govinder IPA at the Birmingham Beer Bash in 2015, it was a fringe event and about half a dozen of us sampled 3 versions of what Shane had brewed, I can't remember exactly, but they were of different ages and condition, including wood. Dr Chris Ridout was due to attend but he couldn't make it. Chevallier is unlike any modern malts and I would describe it as very rich and complex, quite unlike the malteser type taste of Maris Otter. We came to a consensus that the richness resulted in the massive hop additions used at the time (1800's) simply because the malt could take all that bitterness.

Thanks for letting us know Kyle, I'll be ordering some, and I'm inclined to brew an IPA for THBF in the summer, of course the judges will have to abide by BJCP guidelines and I'll probably get nul points.
