Hop Age and Late Additions

Post by nicksonic » Thu May 19, 2016 8:21 am

This may be a daft question but here goes... Obviously the quantity of hops in a recipe has to be adjusted given their age (and storage conditions etc) to get the desired bitterness given the reduced AA%. Is this the same for flame-out additions or does it not matter? So if 10g of 10% AA hops were required at flame-out but due to ageing the AA% had dropped to 5% would you just add 20g?

It kind of depends on the recipe. For most situations, I would keep the addition the same in order to maintain the flavour profile of the recipe, and adjust the bittering addition to compensate. However, if hop bursting, where the bittering is provided by the late hopping alone, I would then adjust the quantities accordingly.
