Mozaic hops

Post by fatcontro11er » Sun Dec 07, 2014 2:16 am

Had a couple of beers recently that had been brewed with mozaic the primary aroma and flavour was fabulously intensely tropical fruits. But right at the back there is a flavour that is really disagreeable to my palate, I can only describe as onion and sweat as in B.O. It's really put me off!
Is it the brewing technique or is it the trait of the hop?

It's something else. Mosaic is a fantastic hop. I've brewed a couple of beers with it (200g late in my last brew) and drank several commercial examples all of which were very good.

I've had a mosaic beer and it was pretty nice with none of the after-taste mentioned (if a wee bit unsubtle for my tastes). I've also smelt the raw mosaic pellets and it was just fruity hopiness. I can't imagine it would be the big new thing if it had that after-taste. I'd suspect either bad hop storage leading to cheesy/sweaty flavours or a process problem.... Butyric acid is one of the main things which causes BO, caused in humans by bacteria splitting down fatty acids..... Could a bacterial infection have got in and be doing something similar to the yeast cake? Then again, I'm assuming the beers were from the same batch.....

had a porter from Moor Brewery the other day which had these hops in there and it was like a blackberry cheese cake smell and taste. loved it but thought it could get sickly very quickly. smaller doses. Made me interested in seeing how I could use them for a lighter beet though

I read that onion taste can be a problem with Mosaic hops. I have had a few commercial beers with Mosaic in and most were excellent, except one which had a strong onion aroma and very off putting. I am not sure what gives this aroma, bad storage? Old hops?

Had a mosaic pale on sat and it was lovely without any of the previous strange flavours so perhaps it wasn't the hop? Maybe over hopped?

Adnam's do a Mosaic Pale Ale in their "craft" beer range, basically keg and it is fantastic I don't care what CAMRA say and yes I am a member. The aroma is extraordinary I just wish they would do a cask conditioned version as the keg is way too carbonated for me.
I am "The Little Red Brooster"

This is weird. I had a bottle of Adnams Mosaic last weekend and didn't finish it. The aroma was all BO, and it had an onion aftertaste.

I thought that it was my senses have a bad day, but maybe not?

I've got 250g of Mosaic coming in the post, but now I'm a bit afraid to use them

Cheers

Monkey, could I ask where you sourced your Mosaic?

I get you. I recently got gifted a bunch of very fresh 2015 mosaic whole leaf hops from someone so I HAD to brew with it. The fresh hops smelled very fruity but lurking in there was an unmistakable bang of sweat. I brewed with them anyway (chinook for littering and then mosaic for aroma and dry hopping). It's a (barely) tolerable pint. Very fruity but the sweatiness spoils everything.
