Spring beer by Greg Hughes
Pale malt 4kg
Munich malt 500g
65 mash temp
Galaxy 14.4% 30g at start
Galaxy 30g at flame out
Wai ti 4.5% 30g flame out
Wai ti dry hop 25g
Yeast wyeast 1275
Not brewed it my self but sounds tasty
Could possiably reduce hops to 25g each so you get 2 brews out of the 200g of hops ?

I have two brews with galaxy in now, trying to mix it up a bit
, getting a list if house ales sorted

I've brewed a New Zealand pale ale with wai-iti, motueka and nelson sauvin. It came out especially good and all my friends raved about it. I enjoyed it so much that I’ve just brewed it again. I made a light summer ale with Centennial and Wai-iti + Wai-iti dry hop. The lemon and lime taste was refreshing, but tasted a little like shandy!

Its my favourite hop for a pale ale, I never found it was citrusy enough to be described as shandy like but definitely good if you want a crisp refreshing ale.

Currently fermenting a Lager with Wai-iti and Wakatu (Hallertua aroma) so hoping some of the Lime character comes through.

Not to hand, off top of head. It's a bit of an experiment, inspired by Top Deck Lager and Lime, I wanted something that hides its low abv. Aiming for 3.5-8%, using a thick mash at 69c for 45 minutes, and a grist to enhance malt flavour and dextrines.D4nny74 wrote:Sounds good Sadfield, got the recipe handy ?
Something like:
Lager malt 78%
Munich II 12%
Cara pils 8%
Aromatic 2%
50:50 split of Wai-iti and Wakatu late in the boil to about 20ibu, plus Lactose to raise FG by 0.001.
Fermented with German Lager X yeast following http://brulosophy.com/methods/lager-method/ method. With some dry hopping.

Remember, you can be especially heavy handed with Wai iti as it's only 4.1%AA. I just made a pale with Wai iti, waimea and hull melon. Fermentation smells awesome.
