Insane starter

Just got my December copy of BYO, they have a recipe for a 14% larger. But the starter required for it was 19l liters :shock: , insane

Two beers for the price of one:D

I would only need a 76 litre starter then :shock: 8)

Or use a few packets of dried lager yeast....

BTW, I've tried Samichlaus which is a very strong Swiss lager (14% IIRC) - I'm not sure it's something I would want to brew.

I think they where use white labs bock yeast, so i am not sure i they dry yeast would give the same flavor profile

Yea it’s nice once in a while, but having 19 litres of it around, not sure. But you would need some good fermentation temp colon for a 14% lager

If I was doing something that string I would prefer to do an ale.

you could brew a nice running lager and pitch on to the massive yeast cake :D

The White Labs Bock I think is the Ayinger yeast. Curiously enough Hurlimann used to brew Samichlaus and the S-189 dried yeast is allegedly the Hurlimann strain so it would be the one to use for a clone.

Whats insane about that?

We are off shopping tonight and I intend to buy a lager kit (el cheapo Kit and kilo thing) to make the starter for my CAP. I'll use a 2L Conical for the initial pitch of the Whitelabs tube, then when its going pitch that into the kit made up to 20L with NO sugar (And a big dollop of yeast nutrients), pump air into it to get a good level of O2 and some liquid movement. then once its finished and settled, I'll rack off the spent wort, and transfer the washed yeast to my 5L conical, and Use a Daab Flying starter on Brewday, after aerating the slurry with a few 30s blasts of pure O2.

OK so my brew length is going to be around 80L, but when you pitch at fermentation temp (~9C) you need to pitch BIG

I know a lot of people use the method of pitching big beer on to the slurry of there running beer, it the fist time I have seen a call for a starter of that size

Where do you get 2 and 5l conicals?

That would be handy and nice to know there is a potability of getting a dry bock yeast :D

I'm talking Conical (Or Erlenmeyer) Flasks here, I got my bigger ones form a fellow brewer who has contacts with a lab supplier nearby. Another place that I've used in the past is Scientific Laboratory Supplies, or of course they are available from Ebay

I also use the big starter method for pitching my Barley wines and imperial stouts or in fact anything over about 1.080

No, it is WLP885 Zurich Lager that is the Hurlimann strain, it was originally recovered from a bottle of Samiclaus by Marc Sedam and made available to Chris White for distribution.

I wouldn't know about the S189 being the Hurlimann, but it is not the Ayinger which is one of my favourite lager yeasts (For German styles anyway)
