Hello all I ordered 500g of safale 04 from Farms as i am going to give it another go. I used to use it years ago but had so many beers ending with high FGs so gave up on it for a while. Probably i could have been under pitching causing the problems. So is there any tips from people using safale 04 on pitching level aeration ect for 110 Litre brew length or anything else that makes it ferment out properly. Cheers :roll: :)

I repackaged my US 56 i got last year & it's still performing great even though it said use within 7 days of opening

IME, I've nearly always been under pitching and it always seems to do the job in 3 days flat. Let us know how you get on :wink:

Until recently never had a high FG yet 8)

I dont know how much of a difference it makes
But when I use any yeast now, I make sure I aerate, till I am bored stupid of it. :wink:

SO4 always does the job for me
Fermenter(s): Lambic, Wheat beer, Amrillo/Cascade Beer
Cornys: Hobgoblin clone, Four Shades Stout, Wheat Beer, Amarillo/Cascade Ale, Apple Wine, Cider, Damson Wine, Ginger Beer

I've used S04 for many years and always end up no lower than 1014. Thats with one-hour's airstoning as well, prior to pitching. I think it must be sensitive to the brewing technique you use. Then again most of the yeast I use ends up quite high. Do you drop part way through? This can also upset the apple cart.

I've never had a problem with 04. But then, whenever i use it, I'm usually looking for something a little higher on the final gravity. Still, I only use the "shake it like you're a disco chick" method to aerate, and my brews are always under 1.014. I've never used more than a pound of crystal in a 5 gallon batch. Maybe I'm making some lighter beers than you.

ive just got some of this as the brew shop didnt have any gervins real ale yeast, i presume i can just use it the same way , whats "under pitching" ?

I'm thinking of going back to S04 as well, because most of the alternatives are a bit dry for me. Am I right in thinking that S04 needs more oxygen than some of the others then?

Thats certainly the thought on Yet Another Brewing Forum. As I changed to aerating using pure oxygen at the same time I used SO4 I haven't found any problems

On the other hand, if I don't want my beer too dry, perhaps the high FG will suit me. In fact, the more I think about it, the less I know why I stopped using S04. I guess we go through phases.
