Slugish Wyeast 1275

I brewed last Thursday and pitched the 1275 in the early evening the OG was 36, I took a reading yesterday (4 days) and it was still 18. Lifting the lid reveals a healthy looking thick yeast crop, it is working but so slowly. I roused it and put the lid back on.

Starting temp was 21c, I dropped it to 18c the next morning when there was signs of activity so temp varies between 17-18c specs say 16-22c

Out of interest I left the sample in the jar and put it in a warm spot approx 22c overnight. This morning after removing a good thick head the sg was 10

Anyone used this yeast and experienced similar, does it like it warmer.

Yeast was fresh Mfg 14 April 08 and the starter was going well.

I've used it and found it to work fairly well - I actually found it to be pretty attenuative. I fermented at 20C.

I've just upped it to 20c Steve so will see what happens.

I've used it, mine took a while also but on the bright side the beer was good :D .

I used it as my first ever liquid. As SF points out it does attenuate a lot. I used it on OG's of 44 up to 47 and i found it left them a little watery. I wouldn't hesitate to use it on slightly stronger beers as i really like the flavour it gives.

I've used that yeast and it was very sluggish. White Labs Burton Ale is reputedly the same yeast, but it tasted completely different to me and I had no problems with fermentation. Could well be my brewing procedure though.

I've got it at 19-20c now and there seems a little more activity. I'll just be patient :wink:

Upping the temp a little seems to have done the trick, down to 1011 :wink:
