proper job yeast

Post by cooldad » Thu Mar 25, 2010 9:21 pm

Made a beer using yeast that I propagated from two bottles of st Austells proper job . Made a litre and half starter pitched it in on sunday four days ago and it has gone mad, really frothy with bubbles like from an aero choc bar. When I have used yeast before both dry and liquid it has never gone this mad before and after 4 days normally starts to subside but this is still picking up pace . Temp is 22c . But it does look the same as the beer they had in the fv's when I did the tour last year of the brewery .
this is the first time I've tried this with yeast from a bottle conditioned beer ,and well worth the effort.
some pics below.

I got a bottle of this to cultivate the yeast from too. :)

What are you brewing with it? Be interested to hear what it turns out like.

trying to brew a proper job clone using : 5.2kg pale malt
100g munich malt
16g chinook 12.7% 90min boil
15g Williamette@6.7% 15 min boil
10g Williamette@6.7% 10 min boil
30g Cascade @7.6% 10 min boil
10g Cascade @7.6% 5 min boil
15g Cascade @7.6% 0 min put in at 80`c for 20 min. before cooling .
Using the munich because tried before and the colour was far to light.
IBU 36 and should be 5% abv using Beer smith for calculations.

How did it go? All the yeast fall clear? and what about the flavour come anywhere near what you were hoping for?

Great pics there!
How's that yeast perform? Any idea what the attenuation is? Does it floc well, or need rousing? Thanks
