Safale US 56
Hop & Grape triple strength isinglass i kegged six cornies last night of belhaven 80/-. I had used US 56 yeast this is now my favourite dry yeast for running beers. It isn't the best yeast for clearing. But when i kegged it it was still a little hazy after 3 weeks in secondary. I gave it a doze of isinglass & purged o2 out then shook the hell out of it at 40 psi to carbonate. I left it for about four hours then got impatient to try. The first pint i poured from the engine was cloudy but the second was crystal clear my god it cleared quick. With this yeast you can really taste the hop the malt flavours also a grainy type flavour you get from the flaked maize. Much better than i get when i use safale 04 or nottingham with this recipe






The Mild was brewed with s-04 , not us 56 which I dont like all that much mainly because it doesnt clear and I dont fine.
It makes sense to use us56 for scottish styles however as it is very clean and as you say lets all the flavours of the malt and hops sing without fruity esters getting the way. I like fruity esters tho.
