PLease dont think of me as being a bit slow but just to clarify. is Yeast nutrient salts the same as yeast vit?
It seems that yeast nutrients are simply a mix of Diammonium phosphate and ammoniumm sulphate.
Yeasties need carbon which they get from the sugars, nitrogen which should come from amino acids present in the wort and also some phosphate.
Nitrogen or phosphate are often found as metabolic bottlenecks in the microbial world (typical theoretical ratio of C:N: P is 100:10:1).
Regardless of how much carbon/sugar you have if you don't have enough of either Nitrogen or phosphate the yeast will come to a shuddering halt.
Hence why the nutrients are composed of chemicals that should provide these two basic building blocks.
I think you will be fine with what you have, unless of course the wort is depleted of other trace elements etc which act as co-factors for necessary enzymes.

Yeast salts are simply FANs (free-amino nitrates?). Yeast-vit or similar is usually these salts plus a mix of the other trace elements which yeast need. Typically, the FANs are the only things likely to be in shortage in a wort (and even then they probably aren't). However, I always like to chuck a teaspoonful of yeast vit or salt into the boil just-in-case.
This technique seems to work well also, possibly because unlike the chemical based nutrients this also provides all the other bit and bobs that the yeast need other than just nitrogen and phosphate.oblivious wrote:You can also through in a out of date pack of dry yeat into the boil, canablistic little feckers!
