Liquid vs. Dry

Although the 11g packs are fine for 5 US Gallons for most regular ales, you might need to add another pack to reach the Mr Malty advised pitching rate for a barley wine etc. That rate is a very good pitching rate though. I'm convinced most people using liquid yeasts don't get close to that rate. You end up with starters nearly as big as your main brew! In that case I'd rather brew a smaller beer first and repitch - for example a Belgian pale ale then repitch into a dubbel or trippel.

For lagers, where it's probably best to pitch cold for flavour, it would be a good idea to pitch two dry yeast packs anyway. If you pitch warm then you'll be fine with one.

EDIT: BTW, you're 'in' to making starters? :shock: Interesting. I guess one reason people use dry yeast is because they're not. :wink:

I tend to repitch with liquid yeast aswell but I tend to use it three times going up in strength each time, just put Wyeast Scottish Ale into my Belhaven 70/- (more like an 80/- now since I was left with 21ltrs and an Sg of 1043!), don't know if it is this yeast strain or Wyeast getting better but my six month old yeast smack pack blew up extremely quickly and the 1ltr yeast starter had quite a heavy sediment in it, something that I have not had with the previous Wyeast smack packs.
