Re-pitching top cropping yeast

Post by mysterio » Thu Mar 13, 2008 7:01 pm

What's the procedure for re-pitching a top-cropping yeast like WLP001/1056/US-05? Do you use the yeast at the top or the stuff at the bottom? Anyone think it's worth doing a washing procedure in a kilner jar or just scooping it off and dumping it into the new wort?

I almost always use top-cropping yeast strains and I'm currently using Wyeast 1318 ( London 3 ) and have now reached the 8th generation. I collect from the top between a 1/3 and a 1/4 of the original gravity. I don't wash the yeast, and just store it in a pyrex jug covered with clingfilm in my fridge for up to about a week before repitching into my next brew. I use the calculator on www.mrmalty.com when re-pitching and I've had some very good results.

Did you give this a go? I'm considering doing exactly the same thing tomorrow.
