When you rehydrate a dried yeast, it uses up its energy reserves to become "live" again, is this correct ?
Whats the longest the yeast will survive in this state once re-hydrated?
I used one yesterday, and it must have been nearly 6 hours between rehydration and pitching.
My wort seemed to take yonkers to cool.
Might the yeast have actually lost some viability ?

Re-Hydration Duration Question
At midnight last night, sort of original us-05 original pitch +30hrs - it was still the same story.
The beer was producing co2, an plenty of it, but there was no yeast head to speak of, just small bubble patches.
It would still kick up a foamy head with very small stirs.
Anyways, out of paranoia, i rehydrated and pitched another pack, the one mentioned here ;

The yeast instantly went mental, and within 20 mins had formed a billowy head with some floc.
This morning, it has formed an Über head, more true to type than saf S-04 i reckon.
My questions would be ;
- Was the us-05 working as a bottom-middle fermenter for strange
reason?
- If the Saf had actually taken hold in the beer, would a second strain be
able to start working along side it?
Just ponderings.

I've read somewhere that if yeast is boiled in with the wort it provides extra nutrients when it comes to pitching.
Somethings niggling at the back of my mind about colonies, survival of the fittest?, the established colony can overwhelm any new attempts at colonisation.
So would the new yeast have been guzzled up by the US-05?
