Supposedly the old Edme strain. Anyone use it? The Fermentis website claims it's good for Belgian styles, but I've heard it's very English in character.

Tried it - nothing special, can't say I'm inclined to bother again.

I used it in my 1st AG brew which was an IPA style and it worked pretty well. I used it completely out of necessity because I ordered it by mistake (I meant to order 04). Anyway I ended up with the kind of taste I was after - it is sweetish (but not overly so) and balances nicely against the large amount of hops I used.

I was slightly concerned during fermentation because I didn't get a really thick head to develop. However (i) it was quite cold (ii) through lack of experience I dropped it halfway through fermentation. By day 5 I had a look and the top had sunk to the bottom completely - a hydro check confirmed that fermentation had gone about as far as it was going to.

I'm planning a conventional yorkshire bitter for my next brew and plan to give my other sachet a go. I'll let you know how it pans out.

In his book , "How To Brew", John Palmer lists the Edme yeast and the S-33 as seperate entities.

He says Edme gives a soft, bready finish and has medium attenuation and flocculation.

S-33 produces an estery profile greater than S-04 but less than T-58, with low attenuation and medium flocculation.

I bought some to try, I think I'll use it up on the last kit I have before my step to AG.
