Medium term yeast storage.

I've split a Wyeast pack by making a starter then pouring a third off into another bottle and allowing this to ferment out. What's the best way to keep this for up to about 2 months? Should I leave it as it is and just stick it in the fridge, or is it better to replace the fermented beer with water during storage?

Storage under beer works well, otherwise we wouldn't be able to rtcover yeast from bottle conditioned beers, but only if the quantity of yeast is small (For optimal results), which to be honest is also the same for distilled water storage as well.

You will get away with it, as you will make a new starter, and as long as its kept cold then there shouldn't bee too many funky flavours developing through yeast decomposition.

I've been storing some Wyeast Thames Valley under the starter medium since Feb with no off results to date.
