Which yeasts do you use for which brews?

Why do you use those yeasts?

What character do you feel they impart to your beers?

I use Gervin English Ale yeast for my bitters (which is just about all I make on a regular basis).

1. It gives a fairly neutral flavour in the beer (allowing the malt and hops to come through)

2. It''s easy to start and to manage (no need to rouse during fermentation)

3. It settles into a solid, jelly-like deposit that doesn't rise up in clouds every time you nudge the barrel!

Is that a particular strain as they all seem to have numbers when I look them up on sites...

Yeah, it is a specific strain, though I'll have to dig out a packet to see if it has a number on it.

Gervin Ale Yeast is reputed to be Danstar Nottingham. There should be the acronym
"NA" on the packet of yeast.
