Yeah, I've been reading a lot of it! It's really aimed a level higher than the average homebrewer, but we can learn a lot from it!
For example, I only chill to fermentation temperature (20-21C), because I want the yeast to get off to a good start. But according to that site, you don't get a very good cold break unless you chill the wort down to 10C or so!
I could probably do that in the winter, when the tapwater's really cold, but I'd have to warm it up again before I could pitch the yeast, which seems to defeat the object. :rolleyes:
