Wyeast Liquid starter

I am sure this has been asked before but please bear with me.

I made a 2.5L starter 2 days ago as per Jim’s instructions, intending to split it and brew today.

Unfortunately it is still fermenting (Lots of airlock activity)

Should I give up any ideas of using some of it today or is it OK to split it now?

Not knowing what to do with the yeast (Belgian abbey) I decided to postpone the planned brew - a strong Belgian ale.
I went for an ESB / 6X type clone with dry yeast today.

I am glad someone has asked this question, as it saves me answering it.I do have a query though, what is the best way to store the yeast that you are saving, and does it have a shelf life? I am planning on using a Wyeast pack and don;lt want to use all of it on one brew.

I've just been down stairs to "smack the pack".I'll make up a big starter as per your last post and split into mineral water bottles.As always, thanks for the help.

Update—Let the yeast ferment out like this
If it has fermented out I would let if settle out, pour off the starter medium and add some pre boiled, cooled water, shake to re-suspend and split as you would with the above method.
Split into 3 because I want to make a quite strong Belgian type beer.

Re-started 1/3 again with 2L / 200g dry malt extract. To my amazement the airlock was going like mad after just 1 hour.

I guess it is OK to make my beer now?

It is a lot of messing about in comparison to a bit of dry re-hydrated yeast though :roll:
