I am wondering whether i can improve my pale ale recipes by replacing safale s-04 for one of the following yeasts;safale k97,safbrew s-33'safbrew t58.I am looking at these alternatives as i know charles farem stocks these and i can pick them up at the same time of getting some hops saving the postage.

k97 is a wheat yeast, T-58 is a beligan wit yeast and s-33 has a variable description.
what about US-05 and nottingham yeast?

Does you homebrew shop stock K-97 in less than 500g packs?
As i have only ever seen it in this size

S-33 is apparently the old edme yeast.
Personally I don't like S-04 in lighter beer styles. It's fine for dark beers but I find it's flavour a bit too dominant otherwise. US-05 is a nice yeast but usually needs fining to get decent clarity.

No, I haven't. I once used EDME yeast many years ago and thought it to be rubbish - so whenI heard that S-33 was the same I decided to give it a miss.

yes i would like to use us 05 but i want 500grams rather than pay thru the nose for those small sachets i didnot see this yeast on the CF webb site unless i can persaud them to start selling it?

Safale US-56 £16.10
Safale K-97 £16.80
Saflager S-23 £28.40
Saflager S-189 £30.60
Saflager W-34/70 £30.60
US-56 is the same as US-05

I have just phoned them(charles farem) they say will have some in stock soon thats why not on current web site they also said the same that us05 same as us56.

Have to agree with this, i have tried a few batches of brown ale and in a taste test mine fwhich were ermented with S04 has a lot more fruityness than the commercial brown ale (newcastle).
When i next make a batch im going to go with nottingham or US-05 which ferment clean and will let the malt taste come through more (hopefully).
The stout i made with S04 was great and the extra dimmension S04 brought to it really complemented it.

airtight container in the fridge maybe?
that's how I keep my yeasts and get them out a few hours before using.
oh and yes delboy, S-04 seems to do a great job in a stout

Do you have a vacumm packing thing? I have some SafLager W34-70 in 10g packets from MoreBeer which I think they've spilt up into smaller packs (It's a bloody good lager yeast actually).

I was told by CF to keep the opened pack of dried yeast in an air tight box and put it in the freezer, it will last for a year or so. Ive been using mine now for 5 months with no problems.

In which direction do you want to improve them? If a neutral yeast (ie it doesn't add its own character), good attenuation and flocculation, then why not Nottingham?
Just a thought...
