Yeast for Imperial Porter?
I'm putting together an imperial porter SG 1.090, FG 1.020 - ABV 9%.
It will be (roughly)
62% Maris Otter
14% Munich
8.5% Brown
7% Chocolate
5.7% Dark Crystal
2.8% Crystal
What yeast would be a good choice?
One option I have is to dump it on a slurry of Nottingham from a 1.050 Nelson Sauvin APA I'm making, but wondering if there are any other English or Scottish strains I could use?

Very similar recipe to what I do, except I add Leatherwood honey to it.
My goto yeast for porters is WY 1882. It lets the malt shine and gives some lovely pear esters. Highly attenuative and flocculant.
You would need to get a slant from someone as it hasn't been released for over five years. Not sure if any of the BrewLab yeasts are equivalent.

I like the sound of Wally's suggestion.
Alternatively, if you wanna go the Baltic Porter route, and if you have temperature control, you could use lager yeast. Or Nottingham for the heavy lifting, then rack to a secondary fermentor with a big slurry of lager yeast for a long time.

It's not intended as a Baltic Porter. Baltic Porters are fairly clean, and I like my porters dirty - brown malt and a high FG are the order of the day. I like some esters too, which makes WY1882 sound good... if I can find it.
As an alternative I'm wondering about the McEwans strain - WLP028.

That would do a lovely job of it. One of my favourite strains.Jocky wrote:As an alternative I'm wondering about the McEwans strain - WLP028.

Would / does Irish ale yeast work for this? I have some to use up and really fancy a strong porter

Re: Yeast for Imperial Porter?
I think it would - if it's WLP004 it's recommended by White Labs for Robust Porters, and it's another that was on my list of options: http://www.whitelabs.com/yeast/wlp004-irish-ale-yeast

It's pretty easy going. I've used it quite cool at 17-18c for hoppy pales with a cleanish profile and right up to 24c 50/50 with WLP530 in a belgian quad, which gave lovely esters and lots of bready malt to back it up.Jocky wrote:Any tips on how to handle it?Befuddler wrote:That would do a lovely job of it. It also flocculates very nicely when it's finished, but I've never known it to get lazy early on.
