NBS West Coast
making a Galaxy Delight with the NBS yeast, took off quick and 8 days later still sitting with a good 2 inches of foam ontop. Been sitting at 20'C, just would have expected this to drop sooner. Would you be tempted to raise the temp to finish it, I daren't go near it with a hydrometer till it has fallen.

I have found this yeast takes off slow (unlike yours) and takes a while to drop but has always finished up where it should. I usually give it about 14 days then cold crash and its always produced a nice clear beer

I use this a lot and I find it starts fairly quick. I ferment at 19 and its usually dropped at the end of 7 days when I add the dry hops.
I have found this if you have a large layer of foam that has frothed up when transferring from the kettle to the fermenter. If you dont skim the frothy foam off before adding the yeast the krausen seems to stick around for a lot longer.
Just my observation anyway.
