Saflager W-34/70

Post by michrich » Wed May 25, 2016 9:51 am

Brewed a generic Czech pilsner, used Saflager W-34/70 and primary fermented at 12C for about 2 and a half weeks. Transferred to keg and secondary fermented at 2C for 5 weeks and when doing so took a gravity reading and had a taste of the beer and it tasted fine. Have come to dispense from the keg and it has a definite banana/fruit taste and after using Google it suggests that this was because I fermented at too high a temp. Is there anything I can do to fix it? Looking at the Fermentis website they advise 12-15C with a range between 9 and 22.

I know there probably isn't but is there anything I can do to fix it?

Not sure you can fix it now, sorry. I used that yeast before and made a gold winning Lager and I fermented it at 8C. I also know other Lager brewers who use it and love it.

Thanks John. Lesson learned I think. Will give 8C a go next time. How long do you normally primary ferment for?

Give S-189 a shot, if you can find it.
I'm just here for the beer.

W34/70 can be a bit funky on first pitch, pitching large or repitching on the sediment produces a clean result.

It's funny as WLP838, which is supposed to be the same strain, doesn't do it.

I'm pretty sure it's the WLP830, same as Wyeast 2124.

I wish :( It's either a seasonal liquid yeast edition from White Labs or a private import from the States or Australia. Or you can order 500g from Faram's for ££££......

There you go.
It started showing up in homebrew sizes at some shops here in the States earlier this year. I suspect it will be a lot more readily available as the year moves on. It's a really good yeast for a lot of beers other than Sammiclaus.
I'm just here for the beer.
