US-05 not starting - can I add some Nottingham?

Post by injac » Tue Dec 20, 2016 11:03 am

Pitched some US-05 slurry from a previous brew on Monday morning. Never reused yeast like this before and online consensus was I could chuck it in without a starter. Well, no signs of anything happening yet - if there is still no sign of activity tomorrow how do yout hink adding a dry pack of Nottingham will go? Will have trouble getting some US05 in time now with the xmas holidays.

How old was the slurry?
Did you even the temp between the slurry and wort?
What temp are you fermenting at?
Have you tested the wort or are you just watching for bubbles?
Re getting notty have you got a wilkinsons near you?

Slurry was 2 weeks old and yes I did even the temp. No airlock on this FV (it is a snap and shut lid without a hole in the top) so have left it on top loose so gas can escape. I can usually see the yeast forming on top of the beer by this stage. I'll see how it looks tomorrow and maybe pitch some Nottingham (via the Wilko Gervin strain).

Notty is very similar to us05, used it recently in an IPA, the hb store sent it out as a substitute for us05 as they were out of stock. Slurry might still take off but I would be worried if it has not started by tonight. If it were me I would pitch fresh yeast tonight if there are no signs. Can you see any activity in the fv or are you just going by the airlock?

Don't trust the airlock. I bought a new fast ferment and have an American Amber in it. I pitched 2 pack of fresh us 05 and no airlock activities. Peeped into the vessel though and the yeast is working away.

I would give it 36 hours for signs of yeast on top, before pitching a re-hydrated sachet . I'd also keep the temperature on the cool side with Nottingham in an IPA, compared to US-05.

Thanks folks. There is no airlock on this - just the lid on loose.

MTW - Hope to see you again at the Wishbone event in April. I wont be entering the comp but will be hoping to attend the event regardless.
