Lallemand London ESB dry yeast.

I brewed an extract batch of bitter with this yeast four days ago.
It started quickly and was done in less than 44 hours, taking it down from 1.040 to 1.012 for a 70% attenuation. The hydrometer sample tasted pretty good.
I'm just here for the beer.

Should be nice. Are you planning to using finings or let it clear down on its own?

Great yeast! Probably the best dry all rounder on the market for english bitters imo.

So, so wrong, WA. Finings are used by people who haven't got weeks to wait while the yeast settles.

There's a bit of a craze at the moment for breweries to serve unfined beer. There's a couple in my part of the country which make a real thing about it.

Horrible beers! Full of yeast which (IMO) gives an overwhelming harshness and covers up the taste of the malt and hops.

It is pretty good as dried yeast go; nice to see it being used for a bitter instead of over-attenuating types. I also like Windsor, but the ESB stuff is probably more versatile and less fussy.

Most bitters will (of course) benefit from a little maturing and during that time should usually become fairly clear naturally. When I've used it, the ESB yeast is middling in this respect; it certainly isn't stubborn like some, but also not as fast as some liquid alternatives. Though if brewed with too little calcium, then it will struggle more to clear - not usually a problem, I just mention it because US homebrewing trends/calculators etc seem to prefer lower minerals than would be normal for the style.

Not that there is any shame in using finings, if wished or required; I'd much rather that than be served an excessively yeasty or cloudy beer. Of course there are a few styles where cloudiness is inherent and/or wanted, but I don't personally buy into the thinking that any craft beer can (or even should) look rustic and poorly finished.

Lallemand used to do "Manchester" yeast too. The "ESB" yeast is their old, resurrected, "London" yeast (or so I've gleaned). "Windsor" and "Nottingham" make up the original four.

Unless anyone has a different interpretation from "the horse's mouth".

You have to work hard to get it to clear, but this turned out a great balanced bitter for me last year, which medalled at London & South East 2018

I had one yesterday one week after bottling. I am happy with the taste and it's already fairly clear.
