Allinsons Bread Yeast

Having no LHBS nearby I did an experimental TC with Bread yeast (allinsons dried bread yeast) from Tescos, I added half a teaspoon to a Demijon of juice, the ferment was and still is vigorous at one point a bubble per second and still not far off, it is a thick orangey colour and had an SG of 1065... my questions are ...

a) how far does bread yeast normally ferment.. ie am I likely to end up with an alcohol tolerant yeast that will ferment my TC to some sort of apple wine :( (1.000 or lower??)

b) how long have people found bread yeast to ferment for (mine was 200g moscovado and 4.5 ltrs of juice)

my new TC has been done with champagne yeast as i managed to get some courtesy of Gareth 90
