in a few hours im going to brew my first lager style beer,ive been waiting for winter to draw in as ive got no fridge for fermenting.im currently living in a much warmer climate than good old blightey.
outside or brew room temp is between 12 to 18c.
the problem is like this, the saflager s23 yeast says at these temps i should use 2 packets and ive only got 1 . is it going to effect the end results

You can also use only 1 pack if you start warmer, say 17-18C, and then cool the brew down to fermenting temps.
If you do this method then a diacetyl rest is advisable, as the brew has spent time at the higher temps and is more likely to have fermentation by-products.
Essentially it comes down to:
pitch cold 2 packs
pitch warm 1 pack

It is advisable to use 2 packs, or make a starter, but not essential if you pitch warm.
