WLP300 vers WLP380
Having only used WLP380 in a Hefe which i am very pleased with i was wondering if anyone had used both and if they have a favoured one and why.I am guessing that the 300 has more of a banana flavour and the 380 more of a clove
And I like 300 because it produces more banana flavour
It's almost as simple as that but fermentation temperature plays a big role too. From experience you can produce a fairly neutral weiss beer (like Erdinger) if you use 300 at about 18C and a more banana-ish one (like Weihenstephan) if you ferment more around 21C. Although I wouldn't say it's right to call Weihenstephan an example of a banana-ish wheat beer because it's got a fantastic balance of banana and clove.
I've never used 380 but by all accounts it produces more clovey tasting phenolics.
