also am i right in remembering that once the fermenting has reached its end i need to put the fermenter in a cool place to clear a little before bottling

I did a couple of TC's with exotic juice before and lets just say that it wasnt pretty and they both got ditched. They never cleared and when I tasted the sample taken for a hydro reading it was foul.Infairness I could of messed up my sterilizing(but I didnt on earlier TC's and havn't since

The reason this probably didn't taste too good is because your now delving into the wine part of fermenting, allbeit a low alcohol wine it would have needed a minimum of two months maturing before being slightly drinkable, also you would have required pectolase for clearing, fermented apple juice is very much drinkable at a young age, many fruit juices are not.oxford brewer wrote:I did a couple of TC's with exotic juice before and lets just say that it wasnt pretty and they both got ditched. They never cleared and when I tasted the sample taken for a hydro reading it was foul.Infairness I could of messed up my sterilizing(but I didnt on earlier TC's and havn't since![]()

my advice here would be to make a tropical fruit wine of about 9% abv.
