Hard lemonade

Im planning on brewing this modified recipe tomorrow

• 3kg glucose/dextrose
• 1.5kg lactose
• 12-24 lemons, sliced or chopped fine including peel
• up to 50g crushed or grated fresh ginger (optional)
• 5g yeast nutrient *
• 1 sachet SAFale yeast *
• Water to make up 22 litres of wort *

Full recipe can be seen here here. According to a lot of people who tried it the original needs a lot more sweetness and lacks a fruity taste.

Can you buy any type of flavour enhancer from the HBS ? and also its been recommended to add boiled frozen strawberries to a 2nd fv before racking. For carbonation I'll add 500grams of lactose. So what do you guys think of this recipe any comments suggestions welcomed especially from curious :lol:

Ditch the lemons and add lemon juice? :?

Ahh yes good idea alot of people said the pit or something can make it quite bitter how much LJ do you reckon, ive never bought it before only for pancakes does it come in ltr quantities or only those green little bottles ?

I only came up with that figure because it seems to be the going rate on the Aussie forums and the original recipe does'nt give an amount ?

Sorry - I meant that lactose is added as a sweetener, yeast can't break it down, so no carbonation.

My advice would be try a small (5 litre or so) batch first, should be easier to tweak the flavour once you've actually tasted it

Its a bit beyond my expertise, but my gut feeling is that substituting cane sugar for the dextrose would probably help the sharpness, and personally, I'd be inclined to use a fair proportion of lime juice, since it has a more complex flavour.

Small batches would be the way to go - that way if it tastes like dishwasher cleaner, its not so bad :P
