I would recommend the Whitelabs WLP775 English Cider Yeast. Lovely stuff.

I've refined my TC ingredients down to apple juice and yeast and nothing else, 6% and drinkable - what more do you need?

A yeast starter is probably in order for large quantities. I'm going to try either a three gallon or five gallon batch next I think.

I just pour in the required volume of apple juice and shove in the yeast, a sachet or a table spoon of bread yeast will to 25l attenuates well gives a dry cider.

Thanks for all replys, I just thought that because one sachet of yeast done 5L of TC I might need more for 25L!

i only really use a quarter to half a sachet of my youngs cider yeast as one sachet should do 25L, most the time i shove half in as it gets the job done faster, also i think my last tc was 5% on somerfields apple juice only... less sugar i guess? still kicked like a mule though.

I use a whole sachet of yeast but reuse the slurry up to three times. ;)

I've also noticed quite a difference in intrinsic sugar between the Sainsbury's Basics, Sainsbury's Pure, Waitrose, and Golden err... something or other that I've previously used.

I've got the amounts in my brewing spreadsheet at home, I'll post them up at the weekend if I remember.

nice i work in the local asda thats just opened in my town so im going down there in search of their line of cheap honey and apple juice "cuz im gonna go crazy on mead and cider!" :lol:
they had better stock the honey its too cheap 50 - 70p per LB :D if not guess ill go to the other store who stock it.

Interesting to note the differences in juices, does the 'of which sugars' info in the nutritional information give you any idea as to the abv?

Anyone tried Princes' AJ? I can get that at wholesale ~50p a litre so figured that might be a good one to start with.

Total sugars definitely affects the end % vol.

We could do with a table of apple juice types/sugar contents...

I just wasn't sure how much of those sugars were fermentable. Presumably yeast selection plays its part too as highly attenuating yeast like a dry wine one will ferment more out?

Anyway, you're probably in the best position to draw up the spreadsheet, if you can still see straight :=P
