My 6 month mead experiment

Ok first off this experiment is not so much an experiment but more of an exercise in LAZY.

I made up 5l of mead with Australian Honey. I've read that Aussie honey is one of the worst for mead since it can leave a Eucalyptus bitter taste.

oh well i thought too late now!

In any case i couldn't be bothered to bottle it since i had so many DIY jobs and work was so crap.

6 months on....

I finally bottle it, its important at this stage to indicate that activity only ceased mostly about 2 weeks ago. It was actually bubbling away for nigh on 5 months.

I bottled it up, and snuck a taste. Absolutley divine. Nice and sweet but a clean taste also, no bitterness and CRYSTAL CLEAR.

Going to leave it in the cold for a few weeks and serve it up at christmas :)

Really goes to show what patience (or lazyness in my case) can do!

as for the aussie honey, even bee keepers hate the stuff :lol:
hope mines ready before 6 months... i want some now! :D

Last batch i made i let ferment for about a month then bottled. Tasted ok but was cloudy and didnt taste near as good as this one.

I've got a gallon of Cyser (2lbs honey, 2 litres cloudy apple juice) that's been in the garage for nearly 3 months. Clear as a bell but still tastes like rat piss :shock: Hopefully it'll be drinkable sometime next year...

Anything fermented using honey will take longer to age, some mead makers reckon their meads aren't at their best for 4 to 5 years.

long wait, but worth it (apparently)

so im guessing its worth knocking up around 100L of mead at a time then? mabe in 50L batches? and then keep a good rotation going so you never run out once the first batch is drinkable after 500 years.... :D
