Ancient Mead

Post by dabbles_a_bit » Thu Jan 03, 2008 8:07 am

I decided to make some orange mead. Looked great when mixing it, and when putting it into the DJ. Left it while I put together some Treacle ale (no more than an hour) when I had put that into a DJ, I returned to my study to put it with the mead and the mead had escaped out of the DJ and knocked the top off of the airlock, there was foam everywhere!
Has anyone else had this, It has settled down a bit now after 3 days, but still has about 2 to 3 inches of foam on the top.
The OG was 1086, so with a bit of guesswork I reckon this could make about 9%ish, Is that normal for mead?

You might want to try getting a rubber bung and inserting some tubing and feeding this into a large bottle of water (or sterilising solution)

I do this when i know the liquid is going to be near the top of the DJ or FV and foam might escape. The foam travels down the tube and into the liquid. Seems most of the foam disappears in transit and into the liquid.

I used ale yeast and it didnt go crazy, but its still fermenting merrily some 4 weeks later.

What yeast did you use out of interest?

I'll try the rubber bung and tube arrangement next time, It'll save some cleaning up! It has calmed down a lot now and seems to be bubbling away nicely.

I have to admit I was a little eager to try this, however couldn't wait to get some ale yeast, so used bread yeast instead. I've had it going only 3 days so far, but have read in previous posts that it could take a while to ferment completely. I'm going to aim to drink this for christmas, should be ready by then!
