[quote="quaffter"][quote="DaaB"]Pomegranate wine :shock:

Racked 3 times before bottling and left for 7 months. Dark and coolish place.
quote]

By racking 3 times do you mean you changed its container 3 times during the 8 months?

Hi Hoppkins,
Yes I syphoned each time(with as little air allowed in as possible, tube at the bottom,do not allow to splash) into a cleaned vessel.. DJ.
I wanted it as clear as possible of sediment so it could sit for more than 6 months and not start up again.
I try not to use tablets to achieve this result.

I did this with my red grape wine with added brandy(cheating...yeah,yeah ..a little, amateur brewers license, I call it....but what a fine port style wine with some hump of a kick in it, it turned out to be.....)well worth the trouble of re racking a number of times to get a clear result.
Non of the brandy was lost, well only down my neck

Hoppkins,
Not sure I really answered your question, sorry.
I racked off 3 times in the first month following fermentation being completed.
After that bottled and just let it sit. Dark /cool place.
It was so clear. Perfect.
If it was not, I would have racked off again until clear and then bottled.
Hope this helps,
Cheers,

So just siphoning into another demijohn 3 times is all thats needed after it's done fermenting. No special conditions? Just minimise the amount of splash you get when it's siphoning into the other container?

Yes that is all I do.
I try to not use tablets to kill the yeast/clear the wine if possible.
Yes sometimes these are required.
If it does it all on its own, great.
Clean kit and lots of time is needed to let it do its work.
This is the best I have produced. And a rose the ladies love.
It is clear, crisp and fruity. Just like a Portuguese rose, not dry like the French style.
Chill and it is a winner.
I think the yeast I used had a lot of positive input.
On my last packet now.
Still a brew around March or so,will be great for next Xmas.

Beaujolais yeast is what I used.
It really looks like a young Beaujolais, but rose style.
If that makes sense.

I purchased a number of packets of pomegranate juice.
Watch the sell by dates.
1 packet I had for around 30 days before using, developed a mould on the packaging.
May have been a bad batch.
If you brewed with that it would make the wine bad. I binned it.
Buy and brew asap is my rule of thumb now.

Let me know how you get on.
Ask what you want.
No problems.

One more tip.
One batch I did tinker with the sugar levels    .
Not a wise move Q.
The first batches I made gave me a 11% alc.
Being Mr Greedy I wanted 12%.
Added more sugar to the next batch and it now is far too sweet for us, but is nearly 12%   .
I will not be adding more sugar in the future to get 12%.
Just drink lots more of the 11%, so it feels like 12%, yes, yes
Q off for a rose now

Hi Hoppkins,
Not sure you are still interested in the pomegranate wine :?: .

Today we have a special party for someone.
The girls decided to make a fruit punch and purchased a few cheap bottles of sparkling wine and all the fruit required.
I gave them 2 litres of my pomegranate wine bottled on 7th May 2006 to make a blush punch.
That makes it ...ahhhh....mmmmmm..well you calculate how aged   .

The wine when opened had a nice sparkle to it  .
Went to see my notes as I had not seen this before  .
It was one of my earlier brews(eager to bottle and get down my neck stuff) and I may have left a little sediment in the last 2 bottles.
The first ones we had had no sparkle at all.
So you can add a little sparkle as well to this wine  .

The girls gave up on making the punch and finished my bottles of rose   .
Legless they are, says it all    :D .

Well for me who has had naught all morning  ,
I am off to finish chilling 30 litres of turbo cider  for tonight and sup a few mee self    8).
Q enjoying himself again.
Cheers Q 8)
