Help Please! Make my TC fizzy!
Hello Everyone,
Since January I have made 40 Lts of different tasting TCs, Peach and Pomegranate the best, they come out at 9%, my last two are 7.8% and 6.3% by reducing the initial sugar input. I love them as they are but my friends are asking for something that is not flat like wine but with a bit more fizz! Any input greatly appreciated.

The Pomegranate at 9% is just like Rose Wine. Lovely, Pink and bloody gorgeous mun!

when you bottle your brews do you add sugar & seal the lids?
To make a brew fizzy you need ot introduce co2 and pressurise the container. This can be done in 2 ways.
1. add sugar to the bottles and seal, then leave somewhere warm so a secondary fermentation occurs and co2 is made.
2. Inject co2 artificially via a keg or other device.

Yeh, 1tsp sugar per 500ml/pint bottle (or batch prime), 2 weeks warm 2 weeks cold, =fizzy cider.
Though I know of one chap who can't be bothered and just uses a Sodastream

I thought it might be priming, but I followed a recipe posted by joel_m April 17th 2009 on this post, don`t know how to link these threads yet but I am open to direction. My TC1 & 2 was made on 2/2/13 as per his recipe, (I did do one with runny Honey and one without) as you do! Both tasted the same, flat as a Witches tit but at 8.8% & 8.2% who cares? TC7 was reduced sugar, came down to 7.4%, TC8 reduced again, down to 6.3%. TC9 & 10 made tonight should come out at 5.4% reduced sugar again, pomegranate and blueberry. When I prime these for bottling, how much will the % increase?

Marginally. The priming sugar will add 0.5 % or thereabouts

Will the sugar dissolve on it`s own or is it OK to invert the bottles a couple of times, let the bubbles settle, then put the tops on?

I only do 2 gallon batches so it's no big deal to go round the bottles with the sugar, a 5ml measure, and a (dry) funnel.WalesAles wrote:Hello,

I siphon the TC onto that and reckon between the turbulence of that and yeast's natural inclination to sniff out anything it can find, I don't need to worry.
Never found any sugar left in the empties, for sure.

Primed the bottles as you said, TC 9 & 10, 5.4%, Blueberry and Pomegranate, Just the right amount of fizz, everybody loved them so much that there`s none left! TC 11 & 12 ready in two weeks. Plus 20L TC ready in two weeks. Should turn out to be a nice little thirst quencher for the Summer! If it lasts that long!
