Hi All.
Ok i am an all grain brewer but really do like adrop of cider in the summer.
I live in Norway so making a TC is very expensive and they do not have things like bramleys either which is a bummer. So i am stuck with only one kit that is available. Muntons Autumn gold.
Having made a kit before i found that the yeast made it very thin with little body. I don't have any non fermentable sugars so wondered if i could use a slightly less attenuous yeast in the kit. Something say like a sfaeale s-04 that leaves a littl sweetness being. I also wonder if i should maybe exchange some of the water for say aple juice.
It doesn't matter whether the stuff is cloudy 8 west coast ciders in the uk are) and neither does it matter if i do not carbonate it.. again many good scrumpys are flat.
thoughts please.. looking to buy this on the way home for drinking in the late summer... september time.
thanks

The exchange of apple juice for water is a good idea, bumping up the %age and also giving more apple flavour. The juice gives more fermentable sugar and will leave the cider with a drier taste. I would consider using a wine or champagne yeast personally. Gervin GV4 (as recommended by Pinto for his Sui-Cider) gives good results and, providing you're not trying to get into double figures on strength, should ferment out your cider wonderfully.
