3.75l apple juice
0.75l vimto cordial
800g sugar (makes it about 10% abv add or deduct 100g per 1% abv)
tsp of wine tannin or 1 very strong mug of black tea
tsp of citric acid
tsp of yeast vitamins or a crushed vit b1 tablet
tsp of wine yeast

simmer the vimto cordial for 20 minutes to kill of the sulphites and allow to cool
get all the ingredients except for 0.75l of apple juice into a DJ and leave @ 21c for 10 days ( after the primary vigourous ferment has died down (about 4 days), add the remaining apple juice)
rack to secondary and allow to clear
rack to another dj prior to bottling, put a cap on the dj and shake like hell several times over the next 2 hrs to de gas the wine.

i thought i would give a little update on this one.

well it fermented very easily once the potassium sorbate had been boiled off. fermentation took about 5 days but i left it for the full week before bottling. once it had cleared (2 days) it was a very clear pale colour, much like very watered down apply juice. the taste was quite subtle at first but became a bit stronger and more pronounced the further down the pint. initially it didnt taste particularly strong but there was a definite kick in there which was fairly evident after just a couple of bottles.

overall it was a very easy brew and although not the cheapest i can make at approx £1.30 for 10 pints can be sniffed at.

this is one i will make again but may make changes to the recipe slightly to give a bit more/alternative flavour.
