Hi all.

Going to be putting something on in a demi John later and wanted a tiny bit of advice.

How much ginger is required for a 5l brew, it's it advisable to grate and boil it and use that water?

With lemons, I was thinking three and juice, shall I make use of the rind?

Lastly, 750g of sugar. This sound ok?

Do I need to worry about tannin?

Depends on how much you like ginger - I found that a medium sized root (70-100g) was plenty in my Chilli-ginger TC a while back. Didnt use the rind in mine tho - peeled before use, and mine was simmered in a litre of the apple juice I was using so it all went in.

Tannin is pretty important if you want a little bite in the finished brew - its not hard, just brew a large mug of black tea with 4 teabags and leave it for 20 mins to stew/cool. Id also watch the sugar - the average pure juice TC has enough sugar in it to finish in the 5% bracket, although you mention watering back so a little sugar will help.

All my TCs are pure juice ones - most apple juice cartons are watered back anyway so why add more water ? it's more convenient to dump 4 of them straight in the FV than muck about, and cheap juice can be had for about 50-60p a litre....

And as to recipes - the cider section of this forum abounds with them - search is your friend here - just look for "turbo cider"

I went ahead and did the following:

225g of ginger gingerly grated.
60 ml Lennon juice
400g honey
1 cinnamon stick

Ask boiled for 30 minutes in a litre of water.

Add 500g caster sugar to demi. Add all liquid and ginger, not the cinnamon stick. Top up with 4 litre of water.

Wilko beer yeast, and yeast nutrient. Start gravity 1.046. Smelt lush.

My mistake - I thought you were brewing cider :lol: should read more carefully....

From your description, I think you'll end up with a sort of ginger beer, probably quite subtly flavoured and spiced; be interesting to see what comes out of the DJ. Keep us posted :)

I love ginger beer. I'm going to have to look into making it "properly" (as opposed to pouring it straight from the FV -- usually a demi-john or something similar) into the glass when I want to drink it.

Bottled this. Lovely light straw colour. Lovely powerful ginger taste and smell.

Would do again and add more lemon juice!
