I gather from reading the TC posts that TC is drunk from the fermenter, flat, without fizz. Is this usual for Scrumpy type cider? I have missed out on this bit of our (drinking) culture

How would you keep the cider fizzing once you have bottled it?

Add more sugar to it?

If you don't open the bottle it should keep the fizz. If you're storing in huge plastic bottles there are things called carbonator caps that screw on and allow you to use gas from a kegging setup to repressurise the bottles so keeping the fizz.

Alternatively only use bottles that you could drink the whole contents of in one session.
