TC - A Laugh Indeed

Tasted both TC's this weekend (I'm in Gloucester so I am saving precious water by drinking beer and anything else!!!). Only 2 or so weeks in bottle and it is good, if a bit dry, even for my tastes. The one with Coop clear juice + 1 carton of cloudy xtra nice not from conc stuff is, well still cloudy, but tastes the best of the two (made with SF04, the Lidl one was with Gervin champers yeast and has the nice small bubbles) - can't wait to try with the champers yeast!

2 Questions:

1. Any ideas on clearing future batches made with part cloudy juice?

2. How would I add a tadge of sweetness to take the edge off the stuff - by adding something, or by stopping the ferment a bit early (and how do you do this?)

Grateful for any advice.

Sking, I'm not too familiar with this process and hopefully someone more knowledgable will answer your questions soon... however I'll try my best :

1. Could you use finings to clear the cloudy TC ? I know this can work very well with beer.

2. You can stop fermentation by adding Sodium Metabisulphate (Campden Tablets). This would allow you to stop at a higher SG (perhaps around 1020 ish for a sweeter taste). The down side to this is that you would have to force carbonate as you will not have any active yeast left to allow natural carbonation in a bottle.

Unfortunately i'm not to clear but i dont think you can clear cloudy apple juice but some one else will help you on this.

As for Q2:- add normal AJ to the bottles or barrel, you can also add sugar or honey or even a sweatner, that's the best way to make your brew sweater.

I sweetend my last batch with hermesetas. The little tablets from the local co-op. I add 60 in 5 gallons which took it too far over my attempted magners clone. Next time I am going to add 45 first. I added two drops of red food colouring to turn it amber. The neighbours drank it with a cheery smile and a few were even singing and dancing by the end of the day :lol:

My TC tends to be on the dry side. I find that an inch or so of apple juice in a pint glass of TC takes the edge off nicely.
