I must say that unless this Young's Cider Yeast gives a stunning taste sensation then it's back to SafAle-04 for me in the next TC. The difference in fermentation is remarkable.
This one feermented strongly and steadily but not spectacularly. It's now a deep orange colour, hazy and has a 10mm yeast cake.
However the last one fermented like a crazed volcano trapped in a bottle, rapidly went straw gold and clear, and had a 20mm+ yeast cake continually throwing huge globules of yeast boiling into the cider.
It would seem that not only was there twice as much SafAle, it just holds itself together much better. The proof is in the tasting though I guess.

Just thought I'd have a bash at this whilst I wait for my Wherry to condition.
I used:
4l Sainsburys AJ
150g Brewing Sugar
Youngs Wine Yeast (was all I had, we shall see what happens)
Heated 1/4 ltr of AJ to dissolve the sugars, and then added to the rest of the AJ in a Demijohn. Shook hard and got an OG of 1.054.
Chucked in the yeast and gave it another shake.
An hour later its already going plip. Every 15 seconds or so.
Its better than watching tv....although the missus now thinks I have a drink problem.

Just thought to share with you guys an update of the lemon TC i have done, i racked it last friday into a 2nd fermenter and left over the weekend while i spent my time in a warehouse (normally a field).
So today i have bottled it and also brought me self a lager kit, but pback on topic so here are the pics from today. Also the red capped bottle is Actually a smirnoff ice bottle,
I also primed every bottle with a table spoon of sugar. Also ABV is 10.5%

So going to wait a week or two till i try one of these if a can waite taht longe, haha.

When i made a TC that finished at 10.5% I primed with 1 heaped tsp per 500ml bottle and didnt get any real carbonation at all,not sure if the yeast gave out or not but even bottles that have been left for months have no carbonation,I suppose they could be classed as apple wine

OB, well all my TC's have carbonated really well, the bottles i use are smaller than 500ml, but normally when i put the sugar in they explode like a volcano and on the last two TC's there has been no explosion, but time will tell...
But i really cant wait to try these. My next TC shall be a blueberry type WKD version, but i shall try and lower the ABV to around 5-7, as i like my brews strong but not to strong tbh.

Bottled the latest TC on Monday.
It cleared nicely, tested marginally under 1.000 and looked like this:

Decided to just use a siphon and a clip and stick into nine pint swingtops each primed with 30ml apple juice only. Watch that carpet Mr Tide!

It worked a treat on this occasion, and I got eight sparkly clear perfect bottles plus one slightly stuttery one at the end, which is only to be expected really - last time I just drank this final bit, but it was lunchtime
Out to the shed with them then - a couple of weeks in there and a couple of days in the fridge I reckon!

I ask because I have bought all the ingredients ( except yeast nutrient ) and plan to set it off soon. Looks fantastic.
Tried a bottle wednesday, to soon to tell really as it needs to cure, BUT, it tasted lovely.
But i'll crack open a bottle after i had this pint of lager i brewed, hehe... So i'll give a better update...
But i would say drop the ABV or you might get a few hang overs as it's very easy to drink with a ABV of 10.5% i got.
Also if your like me and you LOVE lemons then it'll be fine but it's really strong tasting of lemon i would say try 300-400 ml of lemon juice, i shall be knocking up some more soon as i have aquired 24 demijohns.
Does any one now where i can buy drink concentrates? like soda stream ones. But checked out soda stream site but they only have 4-5 flavours and no blue berry...
But coming soon shall be some weird and wonderful TC's. ^_^
