25l batch Ginger Beer recipe required

Hi All

As i said in another post i have acquired free a 2" budget barrel circa 1974 well i have no got it reasonably clean an now need to fill it with something.

I fancy a go at 25l of ginger beer .i would like a very low alcohol % more like a pop than a beer can any body suggest a decent recipe to acheive this..i have had a trawl thru the old posts but they are looking for much higher % ..

flavour wise i would like something like the old jamacan stuff .. nice and spicy but low in alc%

For 25L you will need something in the range of 1.5-2kg of fresh ginger. One of my recipes is floating around i think and that required 1kg for 23L but IMHO thats not enough.

You could keep the alcohol to less than 1% if you boil up the ginger and other spices and dont add any sugar and then carbonate as usual. I like my GB fizzy so was priming at the rate of 10g/L dextrose.

This barrel you have, its to store the GB in? Do you plan on bottling it? If not, could you not just add some sugar to that (10g/L say) and then drink it after a few weeks. To keep the carb levels up you could add more sugar every few pints..........
