Could I add spices - cinnamon, cloves, star anise etc to this to make a mulled cider?

Just thinking ahead for Christmas

You can but it's tricky to get the spicing right. If you put them in at the start, some of the flavours can get lost during the ferment.
I did one with cloves once and I'd not bother again...
Probably better off mulling it just prior to drinking, as normal.

I have a 6 apple 2 pomegranite on the go. I added tea, 500g of sugar and a jar of honey. Anyone know roughly how strong these things turn out? All I know about my last batch was that it got me more pissed than I had already been.

Hello Dev,
Do you mean 6L apple and 2L Pom for your brew? I made my first 5L TC in Feb this year with 200G of Demerara Sugar and all the other TC ingredients and it came out at 8.8% ABV. I now make my 5L TC with only 75G of sugar and it comes out at 6.2% ABV. Much nicer in my opinion! If you used 500G sugar you could be in for a very strong brew! Look on google for ABV calculators.
Have you got a hydrometer to check your OG and your FG? Essential peice of kit if you need to know your ABV.
Happy Brewing!!!!!!

Thanks for the gen. I'll treat it with respect! My demijohns and heater pad were the only bits of HB gear I kept when I got rid of it all about 5 years ago (move, job yadda yadda). May still have a hydrometer somewhere in a box but they are cheap so I'll pick one up soon. Planning on getting back to kits soon, then into extract and eventually AG as space situation improves.

The juices are about 105g/l (you should check the packs next time), so that's 840g, + your sugar, 1340g, honey's about 80% fermentable, what size jar? Let's say a 400g jar for another 320g sugar...
Total sugar about 1660g in about 8.5l, a bit under 200g/l
Divide by 20 - nearly 10%
That ain't cider, that's wine

If you use just juice you get somewhere from 5 to 6.5 %, depending on the juice
Start chucking more sugars in, you soon get into silly ABV levels

Thanks OB, I think I will come in slightly lower, adding a litre for the tea and yeast priming volume takes it to about 9.5l and my honey jar was a 340g but even so I should be looking at 8% plus. Sounds good to me - that's why I make it, for the alcohol. I will drink it as I would a fine wine - perhaps with some cheese. I have been taking photos of the process, so once it's in the glass I'll put them up. My 14 year old daughter has been helping me with the mixing and the like, maybe at that level of alcohol I might not let her be chief taster!

Ah, right, when I used to use tea I only ever did half a litre, and you only used a small honey jar, so strong but not crazy.
If you like that kind of stength, think about making it with Suma concentrate instead of cheapo AJ.
Costs a little more, but not hugely, and you get much more apple flavour in.
0.5 litre of Suma has the apple and sugar of 3.5l AJ, so something like...
1l Suma, 0.5l tea, .5l someotherjuicetoroundouttheflavour, 2.5l water gives 2x the apple and 8.7%, or
0.5l Suma, 0.5l tea, 0.5l someotherjuicetoroundouttheflavour, 2l AJ, 1l water gives 1.57 the apple and 6.8%
Lots of similar combos you can try

Dunno what Flikr links look like, so dunno what you need to do to make them work apart from maybe highlight and click the IMG button above the edit box. If I could see what you get I could say what's wrong.

The Flickr link is to a directory interface, and Flickr chooses a size of pic to show from the resolutions available.
So your link isn't an actual pic, it's to a bit of Flickr code.
On Flickr, either use the MoreWaysToShare doofer near bottom right and "Grab the HTML", use that as your link, OR click through to the lightbox until you get an image you can rightclick on to get the Copy Image URL option and use that.

OK, but I'd like to get pictures in the body of the post and a little more reasonably sized.

Y'know what, I can't really be bothered - I'll let you all know how it tastes.

The 'Grab the HTML' thingy gives a listbox with a range of sizes, looks quite useful, almost makes me want a Flickr account
